Description
English: The picture shows a specialty of Baranja cuisine - Carp on forks. The fish is cleaned and opened next to the dorsal bone along its entire length, including the carp head. The open carp is well salted, lightly coated with finely ground Baranja paprika over the entire surface. Spray with oil and leave in the refrigerator to age for 12 hours. After that, put the carp in a fork next to a very burning fire with occasional turning. After 2.5 hours, the carp is slowly squeezed out of excess fat and takes on a bright golden color.
