Description
Español: Trozo de sierra

- Laminas de queso - Tomate - Longaniza - Cebolla - Sal, pimienta - Mantequilla - Orégano - Limón - Vino blanco (opcional) Preparación: Marinar la sierra con ajo, pimienta, limón y muy poca sal. Tapar con film y dejar en el refrigerador una hora mínimo. Pelar la cebolla y cortar en aros, lavar muy bien el tomate y cortar en láminas sin pelar, tomar la longaniza y cortarla también en trozos. Teniendo todo esto preparado, colocar la sierra en una fuente para horno previamente enmantequillada, haces una cama de cebollas donde montas la pieza de sierra, la cubres con laminas de queso (con unas dos basta), agregas las laminas de tomate y espolvoreas un poco de orégano y una pizca de sal, y finalmente, las rodajas de longaniza. Lo dejas en el horno a 180 grados por unos 25 a 30 minutos. Opcionalmente, unos 5 minutos antes de sacar del horno, puedes agregar un chorrito de vino blanco en la fuente del horno para desglasar un poco la cama de cebollas.

Esta también se puede hacer en doble parrilla en forma de A a las brazas toda la sierra cubierta con papel de aluminio por dentro una buena capa de salsa de aji, para servirla desde las mismas brazas, acompañada con una ensalada a la chilena y un buen pebre
