Mix theeggs, and vegetables lightly togetherplace on the lettuce and cover withmayonnaise. i To Make Mayonnaise.—Mix in aniced dish a half teaspoonful of salt, adash of pepper and mustard, a tea-spoonful of powdered sugar and theyolk of an egg.—Stir until wen-mixedand thick, then add one teaspoonful oflemon juice and a few drops of chilledoil, continue adding oil until the mix-ture is very thick, then add morelemon juice or vinegar, until two table-spoonfuls of the acid is used and threefourths to a full cupful of olive oil. As a variety someof the following may ap-peal to the taste of thosewho like a change. Watermelon Ice.—Cutthe melon in halves, re-move the seeds from theedible portion and chopit fine, add sugar andpack in a freezer, turnto freeze and serve like soft snow. Chilled and Filled Cantaloupe.—Re-move Jhe seeds from a melon, cut inhalves, fill with vanilla ice cream andplace the halves together and lay onice to chill. When ready to servecut them apart and sprinkle with alittle chopped preserved ginger orchopped: Trots:— Musk Sherbet.—A most delicioussherbet may be made from musk mel-ons.
