taken fromthe tree, whether they are ripe or green,for they belong in the catagory medi-um, the size in greatest demand by thosewho can afford to be fastidious. Ofcourse all ripe fruit is picked, withoutreference to size but the green, if small,is left on the tree to increase in size. Ripe lemons are ready for immediatemarket, but the green ones are piledaway in boxes for curing or ripening.This usually requires from six to eightweeks. After being removed from thetrees, the lemons are taken to a ware-house, where they are run through awashing wheel and packed ready forshipment. This washing wheel is aboutfive feet in diameter, with brushes fiveor six inches long, arranged on the outerrim. These brushes pass down into atrough of water as the wheel revolves,and in this trough lemons are fed. Thebrushes remove the dirt and slight im-perfections. : THE GREATER YELLOW-LEGS. (Totanus nielanolcucus.) No bird bears a more appropriate namethan does this wader with its long yellowlegs. In many localities Greater Yellow-shanks is the name by which it is com-monly known, and who that is acquaintedwith it does not recognize that the nameTell-tale is also very characteristic of thebirds habits. When flushed, the Yellow-legs excitedly rise from their feedinggrounds uttering loud whistling noteswhich cannot well be expressed in sylla-bles, but are easily imitated by the hunter.Other water and shore birds have learnedthat this piercing whistle is indicative ofdanger and they, too, take flight. Mr.Wilson has said: Nature seems to haveintended this bird as a kind of spy, orsentinel, for the safety of the rest; andso well acquainted are they with thewatchful vigilance of this species, thatwhile it continues silent among them, theducks feed in the bogs and marshes with-out the least suspicion.
