Description

A local traditional huangjiu (Chinese wine/beer) brewery in Qing dao a coastal town in East China. The huangjiu is stored in clay jars, sealed with plastic or wax paper and capped with a lid made of yellow clay or mud. This form of a seal is called a "mud cap" (泥盖) and enables the jars huangjiu to be aged slowly with minimal exposure to oxygen.

Unlike the name of this image, there is no cow dung involved.
