"Sanchez, Balthazar (d. 1602), confectioner, is of unknown antecedents, except that he was born in Jerez de los Caballeros, Badajoz, Spain, and is believed to have been comfit-maker 'early in his career' to the future King Philip II (Robinson, 2.255).

§ Variations in English spelling were partly because of the lack of common standards. Though I also wonder how far they might also reflect the substantial changes around that time in what's now known as Original Pronunciation (OP)

§ It may be that the word "comfit" indicates he was a cook. [The original meaning of Comfit referring to a slow and lower temperature method of cooking and preserving meat in its own fat.] ______________________

§ Perhaps the discrepancy in the dates of death given might be due to the calendar changes in England at around that time? (Julian to Gregorian).
