western portion of these great United States is all aglow with anew industry that is emerging from behind the cloud of businessdepression and warming with genial rays of promise the agriculturalpopulation, the hardy sons of the soil, the exemplars of the great Cin-cinnatus—Americas true freemen. The industry thus developing is the growing of American sugarbeets by American farmers, their manufacture into American sugar forconsumption by the American people. There are only seven beet sugar factories in the United States, andof these the Pecos Valley has one, being located at Eddy. On the 9thof May, 1896, ground was broken for the foundation of the presentstructure, and on November 25, six and one-half months from the dateof commencement, the first beets were fed to the knives, and the firstbeet-sugar factory of New Mexico was formally launched in the manu-facture of sugar. The campaign was continued over a period of threemonths and, everything considered, was a most complete success.

In a way experimental, the greatest interest was centered in the finalresult and the general summary made at the close of the seasons work.It was in nowise disappointing. Rather was it an occasion for jubila-tion, the result surpassing the claims of even the most sanguine. Theinitial seasons work proved that irrigation and sugar-beet raising areadmirably adapted to go together. That good soil makes the seedgerminate; water makes the plant grow; smdight puts the sugar inthe beet. It was proven, and is admitted by all authorities and experts, that thebeets grown in the Pecos Valley of New Mexico in richness of sugarcontent exceed those produced in any other beet-growing district in thisor the Old World.
