Roast suckling pig ready for the New Years table. Use mint or parsley over the eye ana togarnish. Place a round rosy apple in the mouth—Ed. cotton cloth around the pig to holdhim in shape. Place a cork in themouth. Rub the outside thoroughlywith salt and pepper and dredge withflour. Cook in a moderate oven fromthree to four hours basting frequentlywith the fat in the pan and with but-ter and hot water. If the pig is turn-ed occasionally, the sides and underpart will be evenly cooked. Whenready to serve garnish with parsley inthe eye cavities and back and with arosy apple in the mouth. Serve withapple sauce. MARYLAND BISCUIT 1 quart flour 1 teaspoon salt 2 tablespoons lard or butter 1 cup cold water Sift the salt with the flour and workthe shortening thoroughly into it withthe hands. Mix with the water to avery stiff dough adding the watergradually, stirring and kneading allthe time. Knead for ten minutes thenbeat hard with a biscuit beater orheavy rolling pin for twenty-five min-ute
