The building dates to the late 19th century when it was a two-story home. About 1920, the first floor of the property was converted into a veterinary doctor's office for Dr DC. H. Dibbelli, with the second floor becoming the main residence.

In 1931, the first floor was renovated into a restaurant which was opened by Margaritis Karapelou, a Greek immigrant who served hot food, various lunches, beer and was a neighborhood watering hole for workers in the area. Karapelou served a pork Bar-B-Que sandwich which made the restaurant famous in the city. In 1973, the business was taken over by his son John Karapelou, who had worked for his father for the previous 20 years at the restaurant. John for years was a very visible part of the Liberty Lunch, as he worked behind the main window and would be seen by both his customers as well as people who walked by.

Karapelou retired in 2005 and the business was sold to Harry Ris Zervos, who basically continued the business as it was for the previous 73 years, including the original wooden booths. However, the business, as well as the neighborhood declined, with the primary focus being the sale of alcohol for more than a decade. By the 2010s, Allentown police were being called to Liberty Lunch about 30 times every week, because of people drinking outside. In 2015, the restaurant was sold for the last time to Kuljinder Kaur of Easton. He closed the restaurant and reopened the facility as Kaur's Market, primarily being a convenience store selling lottery tickets, beer and snack food items.

John Karapelou passed in March 2017.
