العربية: الطاجين المغربي هو أحد الأطباق التقليدية المميزة في المطبخ المغربي. يتكون الطاجين عادةً من اللحم (الدجاج أو اللحم الحمراء) أو الخضروات أو البقوليات، المطهوة مع البهارات والتوابل، والمغطاة بطبقة من الخبز أو البطاطا المطهوة في الفرن.
يتم طهي الطاجين في وعاء خزفي معدني يسمى "الطاجين"، والذي يستخدم كذلك لتقديم الطبق. وتستخدم في الطاجين الكثير من التوابل المميزة مثل الكمون والزعفران والزنجبيل والقرفة والكزبرة والبقدونس، ويمكن إضافة الفواكه المجففة مثل اللوز والتمر لإعطاء نكهة خاصة للطبق. وتشتهر بعض المدن المغربية بطبخ أنواع معينة من الطاجين، مثل طاجين الحمام المغربي في مدينة فاس وطاجين الزيتون في مدينة مراكش. يتم تقديم الطاجين المغربي عادةً مع الخبز المغربي الشهير "الكسرة"، ويتم تناولها في أجواء عائلية مميزة. |
