Sow as early in the spring as the ground can be worked (4 to 6 lbs. to the acre), and every two weeks after for a succession, up to the first week of July. For general crop, sow about tbe middle of May. The soil should be light, sandy loam, well enriched with stable manure, and plowed and harrowed until very fine. Sow in drills 1 foot to 15 inches apart, and when well up, thin from 4 to 6 inches. The young Beets pulled out -of tbe row are excellent, used as Spinach. Swiss Chard or Sea Kale Beet.-This variety is grown only for its leaves, which are cooked like Spinach, and the mid-rib of the leaves can be prepared like Aspara- gus. For early use, sow seeds of the early kinds in the hot-bed or in a box in the house, the last of January or early in February, and transplant them in the open ground in April, in rows two feet apart, and eighteen, inches between the plants in the row; or sow a bed of seed outside as soon as the soil can be worked, if you do not care for real early cabbage. These may be transplanted in about four weeks. For second early cabbage, sow in April and transplant in May. For late cabbage, sow in May and transplant in July, in rows three feet apart and two feet between the plants in the row. One ounce of seed produces about 2,500 plants.
